Its notes, smells and herbaceous flavors stand out, and fresh fruity; more powerful and fruity than the olive oils collected with more ripe olives, . In the mouth it presents more intensity of bitterness and spiciness. Acidity and peroxide level is lower, higher concentration of polyphenols and natural antioxidants, that is, they are oils with more beneficial effects on health.
