Aurum Viridi: GREEN GOLD is an extra-early harvest EVOO obtained from our selected plots on the Augusta Emerita estate (Mérida, Extremadura).
After a meticulous and careful process in the field, the Manzanilla Cácereña and Cornezuelo varieties are harvested green to obtain this balanced blend, with a medium-high intensity and a more than noticeable presence of green grass aromas. On the palate, certain sweet notes of the Manzanilla Cácereña emerge, along with fruit and green almonds. The balance between bitterness and spiciness gives it a subtlety and elegance that makes it unique.
