We chose the Penta variety, sacrificing yield in the field but gaining in organoleptic quality due to the natural sweetness and crunch of the variety, as well as a total absenceof bitter almonds. Our almond trees are grown on trellis system, achieving homogeneous ripening thanks to the perfect orientation and arrangementof the fruits for the absorption of light, thus guaranteeing a fruit of exceptionalquality. Furthermore, the organic management (3rd year of conversion) makes it healthy and respectful of the environment. 100% harvested almonds, without passing through the ground, for subsequent peelingin the field. Drying in the next 24hours in our olive pit biomass dryer, preservingall its properties intact and managing to reduce our carbon footprint bytaking advantage of our own resources. Almonds are stored refrigerated to keepall their organoleptic and healthy properties intact, packaged in small batches on demand.
