High quality sauce with an umami that provides the salinity of the sea and enhances the flavor

Salazones Garre R+D+I team has developed two updated and gourmet versions of garum, the most precious sauce in the Roman Empire. In April 2022, garum sociorum was presented, an artisan product that gives dishes a very balanced flavor of the sea. Based on recipes that arrived Tunisia in the 15th century, we evaluated different selections of roe and finally made it with mullet, hake, cod and ling roe, previously salt-cured, dried and grated and then preserved in organic EVOO.

Founded in 1983, Salazones Garre is a family business that produces artisanal salted premium fish, with the highest quality and hygiene controls, to satisfy to the most demanding palates, which are marketed in the national and international markets. In 2019, these products have been distinguished with the Artisanal Food Award granted by Artesanía de la Región de Murcia. In June 2020, its premium salt cured tuna loin “mojama” received the Superior Taste Award 2020 in Brussels with a double gold star. In January 2022, its premium grey mullet roe received the Superior Taste Award 2022 in Brussels with a double gold star.
