We are a family-run artisan cheese factory that comes from a fourth-generationtradition , with our own herd of goats of the native Florida breed. Our Floridagoat breeding is very ecological since we sow the pastures, hay and alfalfa.Moreover, we have full traceability of the production process from what theanimal eats to the final product, hence the quality of the cheese that we haveaimed for from the very beginning. We have a wide variety of cheeses that wemake with great care and the highest quality. The only ingredients are milk fromour own livestock, rennet and salt, all completely natural, just as my great-grandmother used to do.

Semi-cured Cheese: a soft cheese that is at the same time strong enough to besemi-cured.
