Cerrato VIEJOVEN is a mixed cheese made from raw cow and sheep milk, with a firm texture and a light yellow color, featuring small irregularly distributed eyes. Despite its youthfulness, it possesses an intense flavor, balanced in saltiness and acidity, accompanied by notes reminiscent of champagne.


The cooperative Quesos Cerrato was founded in 1968 by a group of ranchers from the Cerrato region, characterized by abundant pastures with an excellent wild flora rich in aromatic plants, as a means of overcoming the difficulties they had in marketing their productions at a reasonable price. sheep, goat and cow milk.
Since 2006, Quesos Cerrato has been part of the Agropal cooperative, one of the main cooperatives in Spain made up of more than 8,000 farmers and ranchers from Castilla y León and Cantabria who deliver their agricultural production (cereals, alfalfa, vetch, fodder, oilseeds) to the cooperative , protein crops and legumes) and livestock (meat and milk), which the cooperative transforms into unique and exclusive cheeses at the factory located in Baltanás, a town that has an important artisanal cheese-making tradition that served as the basis for the development of the cooperative.
