Cerrato VIEJOVEN is a cheese made from a mixture of pasteurized cow's and raw sheep's milk, a firm, light yellow paste and small, irregularly distributed eyes. Despite its youth, it has an intense flavor, being balanced in salt and acidity, with aromas of cava. Persistent in the mouth with a high aftertaste, where spicy notes stand out in the background, leaving that final sensation of “mmmm… how tasty this cheese is, it looks young but hides an old.”

The cooperative Quesos Cerrato was founded in 1968 by a group of ranchers from the Cerrato region, characterized by abundant pastures with an excellent wild flora rich in aromatic plants, as a means of overcoming the difficulties they had in marketing their productions at a reasonable price. sheep, goat and cow milk.
Since 2006, Quesos Cerrato has been part of the Agropal cooperative, one of the main cooperatives in Spain made up of more than 8,000 farmers and ranchers from Castilla y León and Cantabria who deliver their agricultural production (cereals, alfalfa, vetch, fodder, oilseeds) to the cooperative , protein crops and legumes) and livestock (meat and milk), which the cooperative transforms into unique and exclusive cheeses at the factory located in Baltanás, a town that has an important artisanal cheese-making tradition that served as the basis for the development of the cooperative.
