Starting from our Patxaran Gaizka made with boneless sloes (91 points in the Peñin Guide), we wanted to age this premium patxaran in barrels with a toast with wood in the traditional style.
After many tests with different types of wood, different toasts and different times, we have found what we were looking for, an elegant and at the same time complex result.
Sloe, vanilla, wood, caramel and anise are some of the aromas that receive us.
Once tested, the unctuous impact of the texture makes us want to explore the patxaran, finding a clear presence of the freshness of the sloes with echoes of fresh wood, which are opposed to the presence and sweetness of notes of anise, cherry and vanilla.
We are a liquor, brandy and vermouth factory with a family tradition dating back to 1831.
