Our sardines are made exclusively with fresh fish caught in the field with the artisanal fishing gear or xeito, a gill net which consists of a single piece of netting, one end of which is tied to the boat and sails adrift, a centuries-old tradition in the Galician estuaries. Sardines may be caught with the xeito at dusk and at dawn, choosing only the smallest and most delicate catches at dawn, as the fish's stomach is empty at dawn, favouring the cleaning and toasting process, which is carried out by hand, one by one. These sardines have been prepared with fish from the Ría de Arosa, by the Rianxo fishermen's guild, our catches are from the months of July and August, making our sardines one of the fatty fish par excellence, for their contribution of omega 3 fatty acids, heart-healthy fats, proteins of high biological value, phosphorus, calcium and fat-soluble vitamins.
