Alcohol-free cider that is obtained from a natural cider, made according to traditional procedure. With a correct mixture of the different apple groups, according to their organoleptic and technological characteristics (sweet, bitter and acidic), the must is obtained which, after a slow alcoholic fermentation and at low temperatures, gives rise to the natural base cider.
Once the fermented cider is subjected to a reverse osmosis process by which, in our case and with suitable membranes, we separate the alcohol while retaining all its organoleptic characteristics.The process is completed with a clarification, tangential filtration, biological stabilization and carbonation, obtaining a persistent foam beverage, with rosary formation, of great fineness in the bubbles.
TASTING NOTE:
Colour: pale yellow with straw hues.
Smell: fine and pleasant.
Taste: Fresh and fruity. Slightly acidic, very much in line with current trends.
PAIRING: It should be served, between 7-10ºC. Appropriate to accompany appetizers, fish, fresh cheeses and all kinds of pastries.
Alcohol: less than 0.5%
Service temperature: between 7º and 10º
