ELABORATION PROCESS:
Prepared according to traditional procedure, with a mixture of apples of suitable varieties (Durona de Tresali, Theoretical, Carrió, Raxao, Regona), coming from own farms under the Protected Designation of Origin "Sidra de Asturias".
Prior to pressing, the pulp is subjected to a cold maceration for 12 hours, achieving a must rich in aromatic compounds and more complex in terms of structure. After a slow fermentation at low temperatures in stainless steel tanks, it is clarified and stabilized by tangential filtration (cold so as not to lose the endogenous carbon dioxide), which gives it the grace that is normally achieved by scavenging.
It is a cider designed to be able to enjoy the traditional Asturian natural cider where typical pouring is not possible.
TASTING NOTE:
Colour: straw yellow.
Smell: fine and pleasant.
Taste: fresh with slightly bitter aftertaste.
Pairing: It combines perfectly with soft meats, sausages, pasta, fish, seafood, vegetables and cheeses.
Alcohol: 7% by volume.
Serving temperature: serve in a glass of white wine between 7 and 10º.
