ELABORATION PROCESS:
Natural Sparkling cider made according to traditional procedure, with apple varieties (Durona de Tresali, Verdialona, ??Solarina, Raxao, Regona), coming from own plantations with perfectly located varieties to be able to produce a reproducible product year after year, under the Protected Designation of Origin “Cider of Asturias.”
Prior to pressing, the pulp is subjected to a cold maceration for 2-3 hours, achieving a must rich in aromatic compounds and more complex in terms of structure. After a first slow fermentation and at low temperatures, a second fermentation takes place in pressurized deposits, thus preserving its natural carbonic acid, after which it will ripen for at least 5 months on the lees.
TASTING NOTE:
Color: golden yellow, clean and bright with fine and regular bubble rising up the cup forming multiple rosaries.
Smell: the nose is intense, the primary aromas a little loose, but with rapid integration. In the second impression, the yeast notes of ripening on lees are appreciated during the second fermentation.
Taste: the palate begins being aggressive for its good acidity and slight bitter notes, to give way to beautiful fruity and citrus nuances and ends with a long and refined finish with a sweet spot typical of residual sugar. It is a fresh product with a pleasant finish that invites you to drink more.
Pairing: It combines perfectly with soft meats, sausages, pasta, fish, seafood, vegetables and cheeses.
Alcohol: 7% in Volume
Service temperature: between 7º and 10º
