We are a family farm with more than 3 centuries of history, dedicated to the production of Volcanic and Organic Wines and Oils.
We are located in the heart of the largest Volcanic Massif in Spain, Campo de Calatrava. Our “Maar de la Hoya de Cervera” Volcano is hydromagmatic and is within our estate.It has also been dormant for 5,000 years, so you can feel the minerality of our wines very well.
From the vineyards to the expert hands that care for each cluster, each bottle is a testament to our commitment to excellence.In our winery, art and nature merge to create wines that awaken emotions and delight the senses.
Each grape is grown with love and patience, allowing the volcanic soil and our unique microclimate to express themselves in each bottle.In addition, we continue to focus on tradition and quality by using concrete tanks for the malolactic fermentation of our wines. At Encomienda de Cervera, our goal is to produce an exceptional Gourmet oil with great organoleptic and nutritional properties. The result is intense, aromatic, fruity and balanced EVOOs, with a mild and spicy aftertaste where polyphenols are present in exceptional quantities.
