Elaborated with an extreme delicacy from rye alcohol in homage to the origins of the gin of the XVIth century in the Netherlands.
After a maceration in twelve 100% natural botanicals (some are only found in the area of the “Picos de Europa” chain of mountains) we proceed to a double distillation in GLASS (each one is equivalent to 5 distillations in traditional stills- maximum purity).
A second maceration takes place exclusively in hibiscus flower and a third glass distillation is carried out. After that, we proceed to the blending with spring water granted to have the lowest mineral content in the Iberian Peninsule and we let it rest for three months in deposit to stabilize the gin and let Nature do its work.
At the end of the process, the gin is tasted weekly to proceed with its bottling once it reaches its optimum tasting point.
Tasting note:
Nice and clear appearance slightly colored, refined nose, characterful floral taste with a nicely lingering finale aromatic persistency while alcohol fades away.
