Elaborated with love to work well done from rye alcohol in homage to the origins of the gin of the XVIth century in the Netherlands.
After a maceration in twelve 100% natural botanicals (some are only found in the area of the “Picos de Europa” chain of mountains) we proceed to a double distillation in GLASS (each one is equivalent to 5 distillations in traditional stills – maximum purity).
A second maceration takes place in Ginger, lime and cardamom and a third glass distillation is carried out. After that, we proceed to the blending with spring water granted to have the lowest mineral content in the Iberian Peninsule and we let it rest for three months in deposit to stabilize the gin and let Nature do its work.
At the end of the process, the gin is tasted weekly to proceed with its bottling once it reaches its optimum tasting point.

Very clear and bright appearance, aromatic and elegant nose with lots of spices where Juniper, Lime and cardamom are dominating and make it inviting. Nicely integrated alcohol level giving a balanced effect. Powerful mouth. Nose qualities reflect on mouth. Well-structured and bodied, good refreshing qualities, harmonious end.
