Pimentón de la Vera is the product obtained by grinding the completely red fruits.

Pimentón de la Vera is a product with a smoky taste and aroma which is intense and penetrating due to the process of drying the peppers using smoke. It is deep red in colour and shiny. It has a high strength as a colorant, this being more so in the case of the varieties from the Ocal group than the Bola variety. Taste, aroma and colour are very stable over time, mainly because of the slow and gentle drying process used.   Depending on taste, the pimentón may be divided into three groups:  

·       Sweet Pimentón with a gentle taste, completely sweet.

·       Ocal or bitter-sweet Pimentón:  slightly hot on the palate.

·       Hot pimentón: decidedly hot on the palate.
