These lambs are controlled in all their production phases, from the farms up to the distribution of the certified carcasses and pieces of meat, achieving the traceability of the whole cycle andgatanteeing the certification.Due to the control, feeding and slaughter age (less than 100 days), Extremadura Lamb meat is characterized by its high tenderness, juiciness and aroma. The carcasses certified under the PGI CORDEREX are identified with a numbered seal on theirleg and a seal running along the entire carcass with the mention CORDEREX, which implies a guarantee certificate that all the requirements of our Specifications have been meet.
