The Iberian salchichón is made with the best lean meat of our protagonists, taking great care in its preparation and cured in natural cellars for 4 or 5 months. Its garnet colour, impregnated with light touches of black pepper, gives this secondary actor the category of protagonist for many admirers.

Our effort has focused on being able to close the entire production cycle, from the production of our own Iberian pigs in the Mediterranean pasture of Extremadura, selected genetics, breed purity, extensive feeding, controlled production, artisanal production and maximum phytosanitary control, to distribution with an efficient and organized commercial network so that Dehesa del Conde acorn-fed Iberian products arrive in the best conditions. All this is possible thanks to the fact that we have an excellent team of professionals in each of the different areas of activity, and with more than 5,500 hectares to breed pure Iberian trunk pigs and carry out the final fattening period, each autumn-winter , in a montanera regime, that is, based on natural pastures and acorn.The farm is classified GPSE (Farm for Special Sanitary Protection) and has the controls of AECERIBER (Spanish Association of Breeders of Pure Iberian Select Pig Cattle and Iberian Trunk) ASICI (Interprofessional Association of the Iberian Pig) and of the public health organizations of the Junta of Extremadura and the European Union.
