These Anchovies come from the Cantabrian spring campaign, it is the Engraulis Encrasicholus" fished in the Bay of Biscay and between the months of April and June, which is when it is at its optimum moment of fat and flavor.We remove the guts and heads from the freshly caught anchovies and put them in barrels with salt, where they spend a few months “salting” and this is where they acquire their characteristic brown color. Then one by one the salt is removed, the central spine removing the two loins. These are thoroughly cleaned of skin and small bones. A completely handmade process that results in large anchovy fillets, perfectly “shaved”, with compact meat and an intense flavor.Finally, we add a mild olive oil that enhances the genuine flavor of the anchovies. These "Collection" cans, in addition to having exceptional quality, differ from the other LH120, in that they correspond to a larger anchovy size, 26 anchovies per kilo, which results in excellent anchovy fillets of a very large size.
