This is a semi-sweet wine made with volcanic Malvasía grapes with its own natural sugars which strengthen the flavours of each of its characteristics. Being manually harvested in the month of August produces the best bunches of Malvasía grapes. After destemming and pressing, the must is cooled to 12ºC and decanted for between 24 and 48 hours. It is fermented at a controlled temperature in stainless steel vats and the fermentation is interrupted when the residual sugar level reaches 22 g/l. It is then clarified and filtered.

The oldest winery in the Canaries and among the ten oldest in Spain. We keep some grapevines from the 19th century, which ripen on the mountainside and are hand-picked one by one. The fire, the wind and the rock create the extreme conditions from which these wines of marked character and personality are born and with which we discover the soul of a land and a climate unique in the world.
