PRODUCTION
The Muscat grapes were harvested in August 2021. The grape bunches were brought to the winery on the same day, where they were kept in cold storage until the next day. They were then carefully destemmed to keep the grapes intact. This winemaking technique consists in fermenting the grapes with their skins, leaving them like this for several months. In our case, once fermentation came to an end, we kept the skins in the wine until pressing three months later.It’s a process that’s extremely natural, with no sulphites added (the polyphenols in the skins make them unnecessary). Neither did we filter or stabilise the wine. This means that sediment may appear at the bottom of the bottle.The oxidation of polyphenols gives rise to the orange or ochre hues for which this wine is named.
TASTING NOTES
Colour: Amber due to the oxidation of polyphenols.
Aroma: Complex, intense, with floral notes (orange blossom and rose) and candied fruits standing out.
Taste: Unctuous entry with an astringent finish and mineral notes (saline).
