Trañejo sweet wine with D.O. Málaga 100% Pedro Ximénez.

PREPARATION: Pedro Ximénez varieties, starting from a Natural Sweet base of selected berries, in which the extraction, settling and fermentation conditions have always been taken care of to the maximum, always in stainless steel. Oxidative aging process in American oak casks that lasts a minimum of 5 years (this is the time by CRDO Málaga regulations, the reality of our winery is that it lasts longer, and there may be wines up to 50-60 years old). TASTING TASTE: Very dark color with a wide layer in which the fine meniscus offers iodized tones. In the glass the movement is oily, with thick, dense and colored tears. The nose is very intense and clean. Complex, sweet, with coffee, cocoa, mineral..., in continuous evolution, fresh figs, candied fruit, citrus notes appear. On the palate it is fatty, very broad, succulent with a smooth texture. The sweetness well balanced with the acidity. The aftertaste is long. PAIRING: with sour fruits, nuts, cheeses and pates. The optimal consumption temperature is between 4 and 7ºC.
Bodegas Carpe Diem is located in the Malaga municipality of Mollina, in the north of the province of Malaga. It is located in the Antequera region, with a population close to 5,000 inhabitants. The winery has a surface area of ??20,000 m2 and a capacity of 5,040,000 liters for red, white and sweet wines, and a capacity of 250,000 liters for wines from American oak and French oak barrels. Bodegas Carpe Diem has an exquisite variety of wines under two denominations of origin: D.O.P. Málaga, for naturally sweet wines and liqueur wines, such as Carpe Diem; and D.O.P. Sierras de Málaga, for white, red and rosé wines, such as Montespejo. Bodegas Carpe Diem was born as a result of the acquisition of the historic Bodega Scholz for aging and solera wines originally located in the capital of Malaga. From 1977 to 1993, bulk wine was marketed for different wineries in the province. In 1993, as a result of the initiative and intense work of the Virgen de la Oliva Andalusian Agricultural Cooperative Society and its partners, Bodegas Carpe Diem was created and the first bottled wines were launched on the market by the variants Gadea Tinto, Montespejo Blanco and the Carpe Diems.
