BODEGAS CARPE DIEM
Sweet wine with D.O Málaga variety 100% Pedro Ximénez.
Sweet wine with D.O Málaga variety 100% Pedro Ximénez.
Exhibitor:
BODEGAS CARPE DIEM
Brand name:
CARPE PX AÑEJO
Sector:
DO Málaga
PREPARATION:
Wine with the Pedro Ximénez varietal made from flower must with natural decantation at low temperature and fermented under temperature control in stainless steel tanks. The aging process is carried out in our aging cellar in Malaga in 550-liter American oak casks for 3 years (this is the time by CRDO Malaga regulations, the reality of our winery is that it lasts longer).
TASTING NOTES:
dark color with iodized meniscus. With aromas of coffee, cocoa, candied fruit and citrus. Deep memory of raisins. Complex and intense. In the mouth it is direct with a certain balsimicity that makes the aromas travel the entire palate before reaching the aftertaste, appearing the same components as in the nose directly. Silky and not cloying. The aftertaste is long and very pleasant.
PAIRING:
dessert wine, combines with crumbs, cheeses, citrus fruits and compotes such as quince jelly. The optimal consumption temperature is between 4 and 7ºC.
Bodegas Carpe Diem is located in the Malaga municipality of Mollina, in the north of the province of Malaga. It is located in the Antequera region, with a population close to 5,000 inhabitants. The winery has a surface area of ??20,000 m2 and a capacity of 5,040,000 liters for red, white and sweet wines, and a capacity of 250,000 liters for wines from American oak and French oak barrels. Bodegas Carpe Diem has an exquisite variety of wines under two denominations of origin: D.O.P. Málaga, for naturally sweet wines and liqueur wines, such as Carpe Diem; and D.O.P. Sierras de Málaga, for white, red and rosé wines, such as Montespejo. Bodegas Carpe Diem was born as a result of the acquisition of the historic Bodega Scholz for aging and solera wines originally located in the capital of Malaga. From 1977 to 1993, bulk wine was marketed for different wineries in the province. In 1993, as a result of the initiative and intense work of the Virgen de la Oliva Andalusian Agricultural Cooperative Society and its partners, Bodegas Carpe Diem was created and the first bottled wines were launched on the market by the variants Gadea Tinto, Montespejo Blanco and the Carpe Diems.
