PREPARATION: Sparkling wine made from the Moscatel Moorish variety from our Mollina vineyards, located in the extensive plateau at 500 meters above sea level in the northern region of Malaga, with a continental climate, with an average annual rainfall of 500 liters. They are small-grained grapes of extraordinary quality, which are harvested at the optimum point of ripeness, where an elegant balance between sugars and acidity and optimal polyphenolic potential converge that will give them that intense aromatic character. The harvest is done by hand and in boxes. The grape is processed quickly to avoid any type of deterioration. Unsuitable grapes are separated both by point of maturity and by poor health. It is destemmed, left to macerate and pressed, obtaining free run juice only from top quality grapes. TASTING: Sparkling wine with a brilliant appearance and straw tones, with fine and persistent bubbles. Intense nose, with lots of nuances, stone fruit, white flowers, citrus and tropical. In the mouth the bubble is elegant, providing breadth and a long aftertaste. Fresh and light, with a soft sweetness and an aftertaste in which the stone fruit and white flowers appear again in a high intensity. PAIRING: temperatures around 8ºC. Appetizer or accompanying dessert.
Bodegas Carpe Diem is located in the Malaga municipality of Mollina, in the north of the province of Malaga. It is located in the Antequera region, with a population close to 5,000 inhabitants. The winery has a surface area of ??20,000 m2 and a capacity of 5,040,000 liters for red, white and sweet wines, and a capacity of 250,000 liters for wines from American oak and French oak barrels. Bodegas Carpe Diem has an exquisite variety of wines under two denominations of origin: D.O.P. Málaga, for naturally sweet wines and liqueur wines, such as Carpe Diem; and D.O.P. Sierras de Málaga, for white, red and rosé wines, such as Montespejo. Bodegas Carpe Diem was born as a result of the acquisition of the historic Bodega Scholz for aging and solera wines originally located in the capital of Malaga. From 1977 to 1993, bulk wine was marketed for different wineries in the province. In 1993, as a result of the initiative and intense work of the Virgen de la Oliva Andalusian Agricultural Cooperative Society and its partners, Bodegas Carpe Diem was created and the first bottled wines were launched on the market by the variants Gadea Tinto, Montespejo Blanco and the Carpe Diems.
