PREPARATION: The grapes are harvested annually for the production of a 100% Pedro Ximénez (organic) quality wine, for which it is necessary to choose the bunches more selectively for their aging for a period of 6 months. Cold maceration between 12-18 hours, only the mostoflor extracted at low pressures, vented by cold decantation, is used. Fermentation takes place in stainless steel tanks at a controlled temperature of around 10-12º C. TASTING NOTES: Pale wine with attractive light yellow tones with greenish hues. Very clean nose with medium-high aromatic intensity, very fruity with tropical, fresh and honeyed notes, accompanied by floral notes and a herbaceous background, which gives a touch of greenery to the nose of the wine. On the palate it is a wine with a very balanced acidity that gives it a good freshness. Light on the palate, with a fresh and very pleasant mid palate, accompanied by a saline touch well combined with the freshness that the acidity gives it. By retronasal route it shows a good persistence with hints of white flowers and stone fruit. PAIRING: fish, shellfish, white meat and rice.
Bodegas Carpe Diem is located in the Malaga municipality of Mollina, in the north of the province of Malaga. It is located in the Antequera region, with a population close to 5,000 inhabitants. The winery has a surface area of ??20,000 m2 and a capacity of 5,040,000 liters for red, white and sweet wines, and a capacity of 250,000 liters for wines from American oak and French oak barrels. Bodegas Carpe Diem has an exquisite variety of wines under two denominations of origin: D.O.P. Málaga, for naturally sweet wines and liqueur wines, such as Carpe Diem; and D.O.P. Sierras de Málaga, for white, red and rosé wines, such as Montespejo. Bodegas Carpe Diem was born as a result of the acquisition of the historic Bodega Scholz for aging and solera wines originally located in the capital of Malaga. From 1977 to 1993, bulk wine was marketed for different wineries in the province. In 1993, as a result of the initiative and intense work of the Virgen de la Oliva Andalusian Agricultural Cooperative Society and its partners, Bodegas Carpe Diem was created and the first bottled wines were launched on the market by the variants Gadea Tinto, Montespejo Blanco and the Carpe Diems.
