GRAPE VARIETIES: Tinta del país 100%
These grapes come from organic crops and are harvested from the "Valdesardon" farm, owned by the Arzuaga Navarro family, which is the westernmost vineyard of the Ribera del Duero D.O., located at an altitude of 800 meters in the village of Olivares de Duero. Clay-limestone soil on a hillside that will mark the characteristics of the wine.
At the optimum point of ripeness, the bunches are harvested in boxes of 15Kg, then passed through asorting table and will be destemmed until its vat in stainless steel tank, where after a few days of cold maceration, will ferment at about 24º C. The wine is aged for 12 months in 100% French oak barrels. Malolactic fermentation also done in these same barrels. The winemaking process has been a continuation of the desire for non-intervention with which the vines from which it comes were cultivated.
TASTING
- VISUAL: Red cherry color, clear and bright, with purplish nuances. Medium-high robe.
- NOSE: Great aromatic diversity, where Tempranillo highlights in its red fruit versions, such as raspberries, redcurrants, and strawberries, accompanied by floral touches such as violet. These primary aromas are perfectly blended with refined caramelized and balsamic nuances of their aging in barrels.
- PALATE: Round, fresh and elegant, velvety palate, unctuous and attractive.These creamy sensations, together with the smoothness ofthe sip, give the wine a long finish. A faithful memory of a complex nose.
