Our oil comes from 100% Manzanilla Olives.  This variety is unique to this region and does not exist in any other part of the world.  Because we possess such a unique, high quality product, we take care to monitor even the finest detail in its production by harvesting the olives at their optimal state and processing them directly after delivery to our plant so that fermentation does not affect the quality of the final product. As the main characteristic of our LIQUID GOLD, we manifest its strength and flavor along with its aroma – a union which results in the perfect balance between palate and bouquet and qualifies it a special, unparalleled olive oil.  Its sensory characteristics bring to mind a green, fresh aroma with medium-high intensity with touches of freshly cut grass, banana, and tomato, “an absolute delight for one’s palate”.   As required for this olive variety, a cold elaboration process is applied to this perfect raw material in order to preserve all of its organoleptic and health-promoting properties, such as high levels of antioxidants (beneficial in the prevention of premature aging) and polyphenols (to prevent cardiovascular diseases).  We can therefore affirm that it is an essential element of the Mediterranean diet.
