For the production of our extra virgin oil, the olives are collected directly from the tree with a maximum degree of maturity of 5, allowing us to obtain fruit flavors higher than those required in the organoleptic description. The olive tree varieties grown in the geographical area are varieties adapted to the edaphoclimatic and cultural conditions of the area. The presence of these varieties has been perpetuated over time due to natural selection, adapting perfectly to the conditions of the region, ensuring a multivarietal identity with its own, defined properties and not present in any other olive production area in the region. world. The natural assembly of main and minority varieties allows us to obtain unique sensory profiles, this being another unique hallmark.   Varieties Majority: Cornicabra, Castellana and Manzanilla Cacereña, minimum 80% of at least two varieties. Minorities: Carrasqueña, Gordal, Asperilla, and Redondilla. Together they will not exceed 20%.
