It has a characteristic aroma that has been achieved by leaving it for a few days in centuries-old cedar wood barrels from Yoshino prefecture in Japan. To the taste it is robust with a touch of roughness, refreshing and crisp finish that lacks any unpleasant sweetness. It leaves a dry and deep flavor in the mouth. With the Kimoto fermentation method, a broad and deep flavor is achieved.
