´Hijos de Catalina Rodríguez Castaño´ is a family business with over 40 years of experience in the production of hams and sausages. Experience guaranteed by the tradition of a family of craftsmen who work daily to achieve a product of unique taste and fragance.
The Salas family began in a small factory in Hijate, branded ´Jamones Tio Emilio´ then expand their production scope to Trevélez, which is now part of the Regulatory Council Trevélez ham Specific Designatio and Puente Viejo for Ham Alpujarra. Today our production reaches more than 300,000 pieces annually.
The principles of the company date back to 1982 when Catherine Rodriguez and her husband began making sausages traditionally. Processing room, salt chamber, drying room, shop and toilets: 150m² premises of the following facilities were built. In this store they sold sausages and fresh meat that they produce for themselves.Over time the four sons of Catherine joined the activity and the factory became too small.In 1988 the project of a sausage factory on two floors with a capacity of 1820m² was conducted. On the second floor they made the saugages, and they also cured the ham. On the first floor the saugages were salted. Currently these facilities are solely for the production of sausagesIn 1996 the company´ Hijos de Catalina Rodríguez Castaño´ created CATALINA RODRIGUEZ, SL focusing more on producing hams and sausages. Today, the business consists of a ham drying and vacuum packing zone with an area of more than 8,000m².
