PDO TETILLA COW'S MILK CHEESE

It is a widely known cheese and recognized for its peculiar conical shape in Galician gastronomy. It has a minimum maturation period of 8 days, made with pasteurized cow's milk from sustainable livestock farms that preferably use grazing, and selected by the Cobideza cooperative, as in D.O.P. Arzúa-Ulloa, with strict quality control and traceability of milk at source. It has a characteristic conical, concave-convex shape, thin and elastic rind, straw yellow in color. The paste inside is soft, creamy and uniform, ivory white to yellowish in colour. It has a soft, slightly acid aroma reminiscent of milk in origin. Its flavor is eminently dairy, reminiscent of butter, slightly acid and slightly salty.

Our cheeses are made with the best milk from sustainable grazing farms, where the animals graze freely on the Galician lands of Deza, Tabeirós, Terras de Montes and Ulloa. This milk is carefully selected from among all the farms by the techniques of the Milk Quality Service of the Cobideza Cooperative. The traditional process with which the cheeses are made and the high quality of the milk offer you an experience of 100% Spanish Galician flavors, where you will really feel the countryside at your table.
