ARZUA PDO CHEESE

This cheese, with a minimum of 9 days of maturation, is made with pasteurized cow's milk, from sustainable livestock farms that use grazing, and selected by the Cobideza Cooperative, with a marked character of traditional and artisan production. It has a lenticular shape, with a thin and elastic rind, shiny and smooth. Inside, there is a uniform, creamy paste, without cracks, of a color between bright ivory white and pale yellow; it shows few eyes, rounded and irregularly distributed. Organoleptically, it offers a dairy aroma reminiscent of butter, with hints of cream, vanilla and walnuts; Fundamental flavor of milk, of medium-low acidity and with an aftertaste of global persistence of medium to long type. 

Our cheeses are made with the best milk from sustainable grazing farms, where the animals graze freely on the Galician lands of Deza, Tabeirós, Terras de Montes and Ulloa. This milk is carefully selected from among all the farms by the techniques of the Milk Quality Service of the Cobideza Cooperative. The traditional process with which the cheeses are made and the high quality of the milk offer you an experience of 100% Spanish Galician flavors, where you will really feel the countryside at your table.
