CATALINE CROWN OF ARAGON

Marzipan sweet with rose water inside which hides tender saffron yolk and pear compote with ginger. It is baked and decorated with caramelized natural rose petals.

This dessert, a jewel of patisserie, is presented in precious pieces of 500 grams and in cans that reproduce the painting “Portrait of an infanta. Catalina de Aragón” from the Thyssen Museum, with whom Ascaso pastry shop established a collaboration.

Its crown shape is a tribute to the Infanta Catalina de Aragón, later Queen of England, first wife of Henry VIII and daughter of the Catholic Monarchs. The portrait of the young princess, the work of Juan de Flandes (1496), which is in the Thyssen-Bornemisza National Museum in Madrid, inspired Pastelería Ascaso to make this great dessert.

Pastelería Ascaso was born 130 years ago in Huesca and, since then, our commitment to innovation and research into new formulas based on traditional recipes have made us a solid benchmark for the sweetest gastronomy in Spain.

Today, with the fourth family generation in charge, our production is carried out in a 1,680-square-meter workshop located in the Huesca Logistics Platform (PLHUS), which has the most important advances in the sector to optimize the artisan production that characterizes to our creations.

The quality of raw materials, mixed naturally in our artisan pastry, is our most valuable asset. The Russian Cake is our most notorious creation, a sweet pastry whose original recipe remains a secret of the Ascaso bakery.
