Small sardines are simply smaller specimens of the common sardine (Sardina pilchardus), a blue fish easily recognizable by its silvery appearance. They are, then, subjected to a steam roasting process, after which only olive oil is added, thus obtaining a product of intense flavor and pleasant texture.
