Razor clams (Ensis ensis) are bivalve mollusks characterized by their elongated and arched valves. They inhabit shallow bottoms, burying themselves vertically in the sand, where they leave a characteristic eight-shaped mark. They are mainly caught by diving.
Frinsa razor clams, after the selection of the best specimens, are subjected to a purification process to eliminate the sand and, then, the hepatopancreas is removed by hand. After this, they are then canned, also by hand, and covered with a canning liquid based on water and salt which, when in prolonged contact with the food, becomes an ideal broth for preparing recipes or to be consumed directly with the razor clams to complete the nutritional ration.
