The cockle is a bivalve mollusk that lives in salty waters, buried in the soft, fine sandy bottoms of intertidal zones and in the riverbeds of the Galician estuaries. It feeds on living organisms and reaches a commercial size at about one year of age. They can be harvested either on foot or afloat with traditional methods, using a gear called "raño".
Frinsa's cockles come exclusively from the Ría de Noia, origin of the best Galician cockles and recognized for their flavor and size. The cockles are purchased at the fish market during the season, and undergo a purification process to eliminate as much sand as possible and preserve their characteristic sea flavor. After this process, the cockles are selected and packed manually in homogeneous layers to achieve a perfect presentation.
