C.R.I.G.P. CORDERO DE EXTREMADURA, CORDEREX

The Regulatory Council of the I.G.P. “Lamb of Extremadura” CORDEREX represents lamb producers, industrialists, marketers and consumers.

CORDEREX works as a product certification entity, is that of an organ that complies with and applies the EN-45011 Standard.

CORDEREX controls the lambs protected in each one of the phases, from the farms of production until the distribution of the carcasses and certified pieces, achieving the traceability of the complete cycle. This work is carried out by the technical services of the Regulatory Council.

The lambs are born in the pastures of Extremadura and are raised with breast milk during the first 45 days. Subsequently it is complemented with food authorized and controlled by the Regulatory Council until the time of slaughter. The age of sacrifice is a maximum of 100 days. The weight of live lambs ranges between 21-29kgs. The suitable channels range between 14-16 kg. Lamb carcasses suitable for certification under the IGP CORDEREX quality label are identified with a numbered seal on the leg as well as the seal run along the two half channels with the mention "CORDEREX".

The channels of Cordero de Extremadura are characterized by their valued meat performance, allowing the so-called "butcher cut". It is a meat of high tenderness, juiciness and aroma, tasty, fine and very healthy, with the right level of intramuscular fat infiltration that provides an extraordinary conformation.
