Rafols is a premium desalted Icelandic Codfish (Gadus morhua) producer. Rafols uses only the highest quality pieces exclusively fished by hook and line in a sustainable way. Pieces are opened and put in salt with the bone-in for at least 6 months. Salting the whole piece assures that all the gelatine concentrated on the central bone is recovered once hydrated. This results in a soft texture and distinctive mellow meat with a cured flavour.
