Description: Obtained from the thickest pieces of the morro extra which are desalted and finely laminated. 

 Rafols is a premium desalted Icelandic Codfish (Gadus morhua) producer. Rafols uses only the highest quality pieces exclusively fished by hook and line in a sustainable way. Pieces are opened and put in salt with the bone-in for at least 6 months. Salting the whole piece assures that all the gelatine concentrated on the central bone is recovered once hydrated. This results in a soft texture and distinctive mellow meat with a cured flavour.

Rafols is a family-run business located in Barcelona, Spain. What started in 1945 by Ramon Rafols as a local market stop, after three generations has become a leading brand recognized by the best chefs and restaurants across Europe.
