Fase Olfativa: Frutado medio alto de aceituna verde con notas herbáceas de hierba recién cortada, hoja de olivo, hortícolas (tomate verde), frutales verdes (plátano, manzana, almendra), hierbas silvestres.

Fase Gustativa: Entrada en boca elegante con amargor medio y picante en guindilla final en equilibrio y progresión. Retrogusto con ligera astringencia y notas previamente percibidas en nariz. Destaca la cascara de plátano, junto notas hortícolas y espaciadas. AOVE complejo, equilibrado, armónico y persistente.

Finca La Tortaita is a young project that was started in 2016, without any prior connection or family tradition in olive farming. However, it was born out of love for the olive tree and the passion to achieve a unique and unparalleled early harvest extra virgin olive oil of the highest quality, while respecting the environment and creating an ecosystem full of life. From these humble beginnings, we have focused on step by step merging tradition and new technologies to achieve a UNIQUE product, with the goal of differentiating ourselves through quality, not quantity. 

We view our cultivation as a respectful practice towards the ecosystem. We do not use chemicals, ONLY natural products, and we do not use artificial irrigation, only what mother nature provides us. Most importantly, our cultivation is traditional, which means we do not use heavy machinery, providing more manual labor each season. 

The vast majority of our olive trees are of the hojiblanca variety, of which we have approximately 2,000 trees, planted in the traditional cultivation framework. Additionally, we have a local variety from the area, such as the Gordal from Archidona. Being the only ones who produce this extra virgin olive oil, exclusively from 30 olive trees that are over 300 years old.
