Technical characteristics:
Grade: 13% vol. Volatile acidity: 0.24 g / l. of acetic acid Total acidity: 8.34 g / l. of tartaric acid Reducing sugars: 1.1 g./l.
Elaboration:
We make this txakoli from a selection of 100% Hondarrabi Zuri grapes, macerating the entire harvest in cold temperature to extract the best of the variety. Partial malolactic fermentation reduces herbaceous and vegetable sensations. Four months of work on lees guarantee the durability of a traditional txakoli inspired by Fabian de Mariaka, a medieval character from these lands famous for his strength and courage.
Tasting notes:
Fresh, bright and fruity Txakoli with intense aromas typical of the native variety Hondarrabi Zuri. The partial malolactic fermentation reduces the acid perception and part of the its herbaceous and aggressive character, enriching the roundness and aromatic complexity, with reminiscent notes of honey and nuts. The incorporation of cryomaceration in the production process, four months on the lees and the batonage with natural CO2 from the fermentation intensify the aromas, which burst when uncorking.
