MAKING:
The origin of the grapes is from our own organic vineyard in Nava del Rey, in Valladolid, which come from very old vines of the VERDEJO variety, typical of Rueda Denomination of Origin. The grape arrives at the winery, then it is destemmed and it goes through a tubular exchanger at a temperature of 5ºC. The cold paste goes through two rotary macerators where a five hours pre-fermentation maceration takes place. After that, the clean must is transferred to a new stainless-steel tank and the fermentation process takes place at 16ºC. Once the fermentation process has ended, there is an aging process with lees for two months. Finally, the wine is filtered and bottled, and it is ready to drink.
TASTING SHEET:
- Attractive green colour, with steel glints.
- It has typical Verdejo aromas such as fresh cut grass, tropical fruits and aniseed, with mineral notes.
- In palate is a fresh, pleasant and creamy wine, with a long after-taste. It has fruity, greasy and sweeping flavours.
Optimal serving temperature between 7 and 9 ºC.
PAIRINGS:
It’s a great wine to drink with every fish and seafood but also with Italian paste and all kind of appetizers. Try not to drink alone and enjoy the moment.
BODEGAS EL INICIO is a small winery yet is brimming with technology and the knowledge necessary to elaborate and age great wines.
The winery it is situated in Ribera del Duero, under the imposing presence of Peñafiel Castle, a Medieval fort.
Created with one clear goal: to elaborate high quality wines, wines destined for barrel aging , wines without hurry, elegant and full of flavor.
Wines which in their days gave their name to the Denomination of Origin, which our Director and associate Angel Luis Margüello helped to develop with care and personality back in the 80´s and 90´s .These types of wines, which under his experience, have been the true icons of the area and which are now enjoying a comeback. The wine´s potency falls back to make way for elegance, roughness turns to smoothness, elegant tannins form from aggressive tannins and peace evolves from chaos.
Our winery is set in the Ribera del Duero but we have also been making wine for many years in other areas such as Castilla y León, Rías Baixas and Rueda (here with our 23 hectares of vineyard).
