ORIGIN AND PRODUCTIONDOMINUS is produced from the very best of our crop, with fruit especially selected andharvested in November, when our Picual variety olives are “in envero”: changing the shade oftheir skin in accordance with the evolution of their ripening process, from intense green topurple. Even though olives harvested at this early ripening stage have a lower yield, the result is anexquisite olive oil of special quality that keeps every nuance of taste and aroma contained bythe fruit before completing its ripening cycle.At the mill, the mixing temperature is kept exceptionally low, sometimes just 15ºC, in order toobtain an olive oil of intense aroma and great organoleptic complexity, ideal for all kinds ofculinary treats and a delight the most demanding palates.
