Gamonéu Cheese is fatty, smoked, matured, made with raw milk mixture.

Gamonéu cheese is a fatty, matured cheese with a natural rind, which can be made with cow's and/or sheep's and/or goat's milk, slightly smoked and with slight outcrops of penicilliun on the edges.

Gamonéu cheese is made by hand, differentiating two varieties of production: Gamonéu del Puerto cheese, which is made in the cabins of the mountain passes, and Gamonéu cheese from the valley, made in the cheese factories of the valleys.

The maturation of this cheese takes place in natural caves used for it.
