The King scallop Shell has been known as the "Pilgrim´s Shell" due to their use os a symbol as the pilgrims taking their pilgrimage to Santiago de Compostela. Scallops are morphologically similar but of a smaller size. We harvest them in the Rias, wich give them the special and superior taste, adding in the cooking process our special "sauce" before canning.
