Cheese with Protected Designation of Origin San Simón made with cow's milk from the Galician blonde, Alpine brown and crossbreeds. It is made exclusively in the area of Terra Cha (Lugo). Hard and inelastic smoked crust. Smooth to cut with characteristic aroma and flavor. Healing is done by smoking it with birch wood.
