Harvest: Middle October 4th - 12th. Hand-picked and selected from the vines by the harvester, who are all members of the family.The grapes were collected in plastic crates holding 12 to 20 kg, stackable for easy transportation.
Wine process: We kept the must contained for 6 to 7 days delaying the fermentation process and extracting colour from the antocyans (maceration).The wines was pump 3 times a day to break the cap and extract the richest colour possible.The alcoholic fermentation lasted 17 days, the temperature was controlled between 27 to 30 degrees. Pip extraction reaching 23% using delestages method. Only first must. Natural malolactic fermentation.Albumin clarified. Decanted due to the harshness of the winter. Not filtered.
Bottling: December 2010, wine step into barrels, 45% American, 45% French, 10% Hungarian and Spanish. After 17 months in barrel is bottle it in April 2011, where it rests to the day of labeling and subsequent consumption.
Tasting Notes:
· Colour: Intense, with great coloring. Very good density. Cherry red with purple details on the rim. Glyceric, clean, bright and stunning vibrancy to the time in barrel.
· On the Nose: Powerful fruit aromas, crisp, intense and fresh, blackberry and currants, plums, all stewed, flashes of oak (cinnamon, toffee, caramel, spices and leather), balsamic vanilla. Good balance with alcohol.
· On the Palate: Very fruity and powerful if somewhat dry, fresh and fruity tannins. Evolution without pinching. Very round. Eternal finish. Is at its optimal consumption.
