This is the most traditional artisan semi-cured cheese of raw milk of sheep Churra in Spain.   

This format is due to the fact that the shepherds, when they made their cheeses, crossed them with a stick and hung them from the ceiling, to avoid that the animals ate them, having the central hole, causes a maturation by the center as well as by the exterior causing a very peculiar and characteristic flavor.

It is an artisan product, which is only manufactured in Castilla y León and by artisan companies.
