In Oro del desierto we have a continuous desire to innovate and get the highest quality products, we have undertaken a new exciting project, in which we begin with the recovery of a singular variety completely native to the province of Almería, cataloged and described as "Picual of Almería " whose name is due to the similarity of appearance of the fruit with the original Picual (which we also produce since 1999), but which nevertheless is a variety profoundly different in all aspects, both agronomic, as in the resulting product.

We have selected "Origen" (Origin) as the name of this limited edition, since in our area it is one of the most ancestral and unusual varieties. The tree is of great vigor and productivity; it alternates in production and with a fruit with a very late maturation. It reaches a good point with 70% green fruits in the first weeks of December, being therefore one of the latest ripe varieties in our area. This variety is extremely limited in terms of extension and is only found in some areas of our province, being the Tabernas Desert one of them. The farm from which it comes is very small and located about 850m altitude in a mountainous area. From which the olives have been harvested and transferred to our mill for immediate production on the same day. Oro del Desierto limited edition "Origen" is a unique oil for its rarity, for the variety and the result obtained is absolutely fantastic, with great aromatic complexity and a very balanced and harmonious flavor.

Due to being a very limited production it is only sold in 500ml bottles as a limited and singular edition. With this action we contribute to the staging for the first time of an almost extinct variety and that together with Lechín make up our unique varieties and a commitment to maintain ancestral varieties, fallen into disuse to the detriment of the majority in the national territory.

Presentation: 500ml bottle, individual case. Nº of bottles 2018/19: 2000 units Production: Extraction 2 phases, 1st half of December. Only with olives in early ripening, 70% still green, despite its late harvest. Variety: 100% Picual de Almería (Local ancient Variety).

Area production: Sierra de Filabres, foothills that penetrate the Tabernas Desert (Almería) 850m high.

Organoleptic analysis: This oil has golden color, its clean after filtration. It’s Fruity and has a complex fruity aroma with nuances of green pepper, walnuts, almonds, aromatic herbs, ripe tomato and artichoke, a large number of descriptors, part green and part mature in great harmony, being the last ones present. The palate is medium fluidity, very almond, reminiscent of walnuts and sage with a low astringency, has a very sweet entry that continues with a bitter low and a spicy late middle-high, very harmonious with the nose being unique and complex.

Pairing: Anchovies, sauces, vegetables sautéed or grilled, fish such as salmon or trout and white meats such as pork and chicken. It can be used also raw on bread, salad and to top off all kinds of dishes that provide complexity and aromatic intensity. Analysis: This variety it’s very uncommon and it has a high polyphenols amount 576 mg/kg in this season. Also it has a very high oleic contain over 80% which it’s very uncommon and makes it very healthy as a combination of both factors.

Oro del Desierto is a family business dedicated to olive cultivation and the production and bottling of extra virgin olive oil of the highest quality.

In our estates there are 25,000 Olives of different varieties (Arbequina, Lechín, Hojiblanca and Picual) and ages as well as plantation frames. Harvesting is done by combining manual collection by hand (from traditional olive groves and younger seedlings) and mechanized harvesting of trees over 6 years of age in an intensive setting. All farms have been certified under organic production standards since 1995.

Our extra virgin olive oil is made exclusively from olives from our own estates, in less than 8 hours from the collection they are brought to the mill of the company itself daily. We produce by cold extraction at less than 27ºC and centrifugation in 2 phases. Once produced it is filtered and stored in stainless steel tanks with an inert atmosphere to prevent oxidation. We make an organoleptic selection of our best batches to be bottled in the property under the brand Oro del Desierto.

Our product has received more than 200 prestigious awards nationally and internationally since 2003 and is currently successfully positioned in 31 countries to which more than 60% of the company's high quality and limited production is exported.

In our estates and in the mill we combine technology, tradition and renewable energies, all in a sustainable way. Our company is a pioneer in closing productive cycles with the maximum use, since all the waste obtained is reintegrated into the process, transforming them into by-products that are used in the farm and the factory, for example we use the solid waste to produce natural organic compost which is used as fertilizer in the estates. In addition, 100% of the energy used is of solar origin and therefore renewable.   Our activity is also complemented by a Museum-Restaurant located in an old Mill of the early twentieth century and bioclimatic rural accommodations. In addition, the company has a number of R & D projects under development with universities and technological companies.
