Albacore Tuna: the sea's greatest delight. Using traditional line trolling method of "Currican", our Albacore is caught between the months of July and October. This guarantees a firm, white flesh, without bruises. We only provide the choicest supreme block-cuts.

After being jarred, the Albacore is then marinated in purified sea water, and a small amount of Extra Virgin Olive Oil, for several months to ensure the desired flavour.
