 Oxen meat is a valued, scarce delicacy.
That is mainly because oxen breeding is a costly, high-risk activity. One ox requires, at the very
least, 48 months of development from birth until its sacrifice.
This long waiting period between making the investment and reaping the benefits makes most
cattle breeders shy away from oxen breeding. In 2011, OCU (the Spanish Association for Consumers
and Users) unveiled the study “The reality of oxen meat”. In it, they gave proof that only 3 in every 10
restaurants in Spain serves oxen meat… And that, from those 3, only 2 had certificates to prove the
origin of their meat. This means that, unfortunately, it is very likely that many have not, to this day,
tasted real oxen meat.
At Campogrande, however, we take oxen meat authenticity seriously. All meat we offer comes directly
and only from our Ganadería, which means that we can assure both the quality of the meat and that
the animal has eaten nothing but local, high quality grazing from the moment it was born.

In our Ganadería we, of course, offer the most traditional oxen meat cuts: hip and counter
tenderloin, beef shank… What makes us special, however, is that we work with our meats so as to
offer non-traditional cuts. We crafted oxen cold cuts such as spicy cured sausage (chorizo), cured
smoked meat (cecina), cured sausage (salchichón), and tongue (lengua); and also work with less
traditional oxen parts such as bone marrow.

 Besides our meat cuts, we have designed several dishes where oxen meat is the central element.
Cooked by expert chefs, our dishes can be tasted year-round at our corner in Mercado de
Vallehermoso and at our Ganadería, and on special occasions at our canopy at the Madrid horse
racetrack and at our foodtruck.
We have created a total of thirteen dishes that can be either enjoyed as a tasting menu, tailored
to a menu with first course, second course, and desert, or tried individually

Ganadería Campogrande specializes in the
production of oxen meat of guaranteed quality,
breeding our animals in a completely natural
environment.
We are the cradle of the Berrenda en
colorado ox breed, whose animals are known
to be athletic, nimble, and strong. Oxen, which
are male bulls castrated at a young age, need
peaceful surroundings and frequent exercise
– conditions on which not all cattle breeders
work.
At Campogrande we are proud to work in the
conservation of the Berrenda en colorado ox
breed, and of having become the biggest cattle
farm for this breed in the whole of Spain.
